This dessert includes a cinnamon and raisin stuffed baked apple, drunken apricots and raisins, a homemade caramel sauce, and some crispy cinnamon sugar tortillas on the top, along with vanilla ice cream. The idea for this recipe came from the end of the show, where Evan meets with Connor's sister in the apple orchard, as well as from the song For Forever, when Evan talks about "[grabbing] a scoop at A La Mode," an ice cream shop.
Recipe:
Baked Apple:
Ingredients:
6 green apples, peeled and cored
1 cup brown sugar
3 tablespoons cinnamon
1 1/2 tablespoons ground ginger
1 tablespoon ground nutmeg
3/4 tablespoon ground cardamom
1/4 tablespoon kosher salt
1/4 tablespoon cayenne pepper
1/2 cup golden raisins
3 tablespoons butter, cubed
Instructions:
Preheat oven to 375 degrees F.
Peel and core all six apples, or only peel 3 if you want to try them with the skins on.
Combine the brown sugar, cinnamon, ginger, nutmeg, cardamom, salt, and cayenne in a bowl.
Fill the cored apples halfway with the brown sugar mixture.
Fill the rest with raisins and top with a piece of the cubed butter.
Wrap the apples with aluminum foil and place them on a sheet tray. Bake until soft but not mushy, about 35 to 40 mins.
Drunken Apricots and Raisins:
Ingredients:
3/4 cup dried apricots
1/2 cup golden raisins
1/2 cup sugar
2 ounces apple cider
1 1/2 ounces white rum
1/2 ounce apple cider vinegar
Instructions:
Combine the apricots, raisins, and sugar in a pot over high heat. Mix until the sugar coats the dried fruits.
Add the apple cider and rum to the pot and stir until combined.
Bring the mixture to a boil and continue to mix until thicker.
Add the apple cider vinegar and stir once again. Reduce to a simmer and cook for 2 minutes, until the liquid is thick and syrupy.
Take off the heat and cool. As the mixture cools it will continue to thicken, so do not reduce too far.
Homemade Caramel Sauce:
Ingredients:
1 cup of sugar
5 1/2 tablespoons of butter
1/3 cup of heavy cream
2 teaspoons of kosher salt
Instructions:
Put the sugar in a pan over medium-high heat.
Cool the sugar until it begins to dissolve. Once a syrup, wait until it turns a dark amber color.
Once amber colored, add the butter. Wait until all butter has melted and the caramel has come together again.
Then add the cream, and once again it will bubble up and wait until it comes back together.
The last step is to add the salt and mix it in. Turn off the burner and take off the heat.
Crispy Tortillas:
Ingredients:
5 large flour tortillas, cut into strips
1 cup of sugar
4 tablespoons cinnamon
1 tablespoon cardamom
4 cups canola oil
Instructions:
Heat oil to 400 degrees F.
Once the oil is hot enough, add half of the tortilla strips and fry until golden brown.
Combine sugar, cinnamon, and cardamom, and mix until thoroughly combined.
Add the hot tortilla strips to the sugar mixture and mix until fully covered.
Plating:
Cut the baked apple in half.
Place the two halves on the plate askew from each other and start to place apricots and raisins.
Add a scoop of vanilla ice cream and drizzle with caramel.
Top with crispy tortillas.
