This recipe was inspired by the Ugandan culture that The Book of Mormon skips over in the actual show. To honor Ugandan culture, I created a recipe that features Mandazi, an Ugandan donut, and I added a peanut sauce and topped it with sliced bananas, whole peanuts, and black sesame seeds.

Mandazi Recipe:
Ingredients:
3 cups all-purpose flour,
½ cup sugar
2 teaspoons teaspoons baking powder
1 tablespoon ground cardamom
½ teaspoon kosher salt
1 egg, beaten
1 can of coconut milk: 13 ½ oz
Frying oil (canola, vegetable, corn, avocado, etc.)
Instructions:
In a large bowl, whisk together the flour, sugar, baking powder, cardamom, and salt. Make a well in the center, then use a rubber spatula to mix in the egg and coconut milk until the dough comes together.
Turn the dough out onto a floured surface and knead until smooth. Divide the dough into 4 portions. Roll out 1 portion of dough into a circle about ¼-inch thick. Cut into 8 triangles. Repeat with the remaining dough portions.
Heat the oil in a large pot until it reaches 350˚F.
Working in batches, fry the mandazi for 2-3 minutes per side, until golden brown. Toss in Cardamom Sugar.
Peanut Sauce Recipe:
Ingredients:
1 cup Peanut Butter
1/2 cup sugar
3 tablespoons maple syrup
1/2 cup heavy cream
Instructions:
Combine all the ingredients in a pot. Bring to a boil.
Once boiling reduce to a simmer for 3 mins. Let cool before using.
Plating:
Scoop out 1/3 cup of the peanut mixture. Make the sauce into a big circle in the middle of the plate.
Add your three mandazi: they can be very natural looking, so place them however you like, I often put them into a pyramid.
Add the peanuts and the banana slices, and sprinkle with sesame seeds.
